For this dish, I keep it fuss-free with basic pantry staples: potatoes, cauliflower, tomatoes, and a handful of spices like cumin, turmeric, and coriander powder. First, I fry the potato and cauliflower chunks separately in oil, then prepare my onion masala. The magic happens when I add the potatoes and cauliflower, coating them in the spices and letting them cook gently to absorb all the flavors. A splash of tomatoes adds a slight tang, balancing the earthy warmth of the spices.

Ingredients for Aloo Gobhi
  • 2 medium potatoes, peeled and diced
  • 1 small cauliflower, cut into florets
  • 2 tablespoons oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tbsp ginger, grated
  • 1 medium tomatoes, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon red chili powder (Adjust to taste)
  • 1 teaspoon ginger garlic paste
  • 2 teaspoon Salt
  • 4 tablespoon green peas (Optional)
  • 2 tablespoons fresh coriander leaves, chopped (for garnish)

  2. Fry the Vegetables
  3. Golden fried diced potatoes for Aloo Gobhi recipe.

    Heat 1 tablespoon of oil in a pan. Fry the diced potatoes until they are golden and slightly tender. Remove and set aside.

    In the same pan, fry the cauliflower florets until they are golden on the edges.

    Add a little water to make a paste and set it aside.

    when masala is fully cooked,  add the fried potatoes and cauliflower to the pan, stirring gently to coat them evenly with the masala. Make sure the vegetables are well combined with the spices.

    Cover the pan and cook on low heat for 8–10 minutes, stirring occasionally. If you like green peas, add them at this stage and mix well. Cook until the vegetables are tender and fully infused with the spices. Add little salt if needed.

    Green peas are completely optional; if you like, you can add them at this stage.

    Since we are making the curry version, add a little water and stir well. Let it simmer for 5 to 10 minutes, allowing the flavors to meld together and the curry to thicken slightly. Once the curry thickens, garnish it with fresh coriander.
