Step-by-Step Instructions for Making Egg Curry
    Prepare the Eggs
  1. A pot of boiling eggs in water, illustrating the first step in preparing egg curry

Place the eggs in a saucepan and cover them with water. Bring the water to a boil over medium-high heat. Once the water is boiling, reduce the heat slightly and let the eggs simmer for 10–12 minutes.

  2. Peeled boiled eggs on a plate, ready to be added to the frying pan for making egg curry.

After boiling, transfer the eggs to a bowl of cold water to cool for a few minutes, then peel and set them aside for the curry.

  3. Fry the Eggs
  4. Heat 2 tablespoons of oil in a pan and lightly fry the boiled eggs until golden on all sides. Remove them and set aside.Golden-brown fried eggs in a frying pan, prepared for adding to the egg curry recipe.
This step is optional. If you want to keep the dish a bit healthier, add the boiled eggs directly to the gravy without frying.
  5. Onion & Tomato paste
  6. In the same oil where you fried the eggs, add cumin seeds, chopped garlic, ginger, onion, tomatoes, red chili, cardamom, bay leaf, and a cinnamon stick.Sautéing dry spices, ginger, and garlic in oil in a pan, creating a flavourful base for egg curry.
  7. Sauté the onions and spices until the onions turn golden and the tomatoes soften and caramelize. This process brings out their sweetness and deepens the flavors.Sautéed chopped onions and tomatoes with dry spices in a pan, ready to be ground into a paste for egg curry.
  8. Onion and tomato paste in a bowl, prepared for making egg curry

Once done, transfer the mixture to a blender and grind it until you get a coarse paste.

  9. Preparing the Egg Curry Gravy
  10. Sautéing onion and tomato paste in a pan to prepare the base for egg curry

In a deep pan, heat 1 tablespoon of oil over medium heat. Once the oil is hot, add the previously prepared onion and tomato paste. Stir the mixture continuously for about 5 to 10 minutes, allowing it to cook down and develop a rich flavor.

  11. Mixing spice paste with onion and tomato paste to create gravy for egg curry

Now, add the spice paste you made earlier into the pan. As you do this, keep stirring so the spices blend well with the onion and tomato mixture. You want all those flavors to come together nicely.

  12. A rich and aromatic egg curry sauce simmering in a pan, ready for the boiled eggs.

After about 10 minutes of stirring, you'll notice the oil starts to separate from the spice mixture. That’s a good sign—it means the spices are cooked and the flavors have really deepened

  13. Adding the Eggs and Final Touches
  14. Boiled eggs added to the sautéed spices for egg curry

Carefully add the boiled eggs to the pan. Gently stir to coat the eggs evenly with the spices, ensuring they absorb all the rich flavors.

Be careful not to break the eggs while mixing.
  15. Adding water to the pan to create extra gravy for egg curry

After 5 minutes of cooking, add water based on your desired gravy consistency—add more for a thinner gravy or less for a thicker one.

  16. Final egg curry resting in the pan, ready to be served

Keep stirring to combine, then cover the pan and let it cook for another 5 to 10 minutes over low to medium heat. This allows the flavors to meld and the eggs to soak up the delicious gravy.

  17. Garnish and Serve
  18. A bowl of delicious egg curry served with rice and naan, highlighting the final dish.

Garnish the egg curry with freshly chopped coriander leaves for a burst of color and flavor. Serve it with butter naan, parathas, or steamed rice for a delightful meal.
