  1. Heat the oil in a pan over medium heat. Once the oil is hot, add the chopped green chili, garlic, and grated ginger. Sauté for a minute or until fragrant. 

  2. Then, add the chopped onion and cook, stirring occasionally, until the onions turn golden brown and soft. This should take about 5-7 minutes. Make sure to sauté on medium heat to avoid burning the garlic and ginger.

  3. Add the chopped tomatoes to the pan and continue sautéing. Make sure to cover the pan with a lid occasionally to help soften the tomatoes and release their juices.

  8. Since we are making the curry version, add a little water and stir well. Let it simmer for 5 to 10 minutes, allowing the flavors to meld together and the curry to thicken slightly. Once the curry thickens, garnish it with fresh coriander.

  9. Your Aloo Gobhi is ready, serve hot with poori, paratha, or steamed rice for a delicious meal.
